Vegetarian Kale-Sausage Sliders with Lime Vinaigrette
About 4-5 leaves of kale, chopped finely
2 small rolls
2 Morningstar sausage patties
1-2 slices of Swiss cheese
For the lime vinaigrette
1/4 cup olive oil
1/4 cup balsamic vinegar
3 tbs lime
2 tsp sugar, white or brown
Chop the kale very finely, since these are sliders. Kale is very large, and sliders are very small, so not chopping finely can leave you having about one leaf per slider, and then your slider will be bare and bereft of tasty goodness. Sauté the kale until bright green. While the kale is sautéeing, mix the lime vinaigrette; when the vinaigrette is done, pour over kale. Let simmer.
Microwave, fry, bake, or otherwise heat the sausage patties.
Meanwhile, cut your rolls in half and butter the open halves. I used dinner rolls leftover from Thanksgiving, but any small roll will do.
Place face-down in a small pan; fry until the butter has melted and they are slightly crispy, but not brown. Remove from heat.
Assemble sliders by putting part of the Swiss cheese on the top and bottom of both sliders. This prevents the vinaigrette from sinking into the rolls and making them soggy. I dislike using too much cheese, so I quartered one slice. Put sausage on the bottom half of the rolls over the cheese, then a small heap of kale on top. Put the top half of the roll on, and you've assembled your sliders!
You will have a lot of the kale left over; it is excellent for use over couscous or quinoa.
How many meals will it make?: 1, but the leftover kale will make 1-3 more.
