Kale-Lime Fried Tacos with Dipping Sauces


1 16oz can refried beans
1/2 bell pepper
1 medium-sized onion
1/2 cup prepared salsa
1 prepared batch of kale with lime vinaigrette
Shredded cheddar cheese, about 1/2 cup for 2-3 tacos
20-ct package of small soft taco tortillas
Ranch dressing, sriracha, and "better" salsa for dipping

Sauté bell pepper and onion until onions are translucent. Add beans and salsa; continue cooking until heated through. Set aside; replace on burner with frying pan and set to heat with some sort of fat soluble. Pan will be hot enough when a droplet of water crackles over it.

Assemble tacos: line of cheddar top with refried beans, then kale. Fry in pan until golden-brown.

Serve with peach or other delicious salsa and ranch dressing spiked with sriracha.

How many meals will it make?: 6-8, with a serving of about 2 tacos.
